Sticking to a gluten-free diet can be limiting and challenging. While all of your friends are enjoying their toasted bagel or pizza, you are forced to eat your not-so-attractive meal. Well, not anymore!
Although not a full course meal, this savory muffin will definitely make you love being gluten-free. Giving you that soft and yummy bread-like carb satisfaction and made with less than 4 main ingredients. No artificial anything....Win-win!

Gluten Free Muffins

Ingredients:
4 eggs
3 tbsp of tahini
Chopped sautéed medium onion
1 tsp of baking powder
Salt & Pepper
Pumpkin seeds (optional)
Smoked paprika (optional)
Directions:
Preheat oven to 350 degrees
Sauteé onions with a drop of olive oil and let cool.
Place all ingredients in a bowl and mix. Expect a thin consistency.
Grease muffin pan (I used one that has room for 12....see pic below)
Pour into 9 muffin slots
Top with pumpkin seeds, smoked paprika, or chopped herb of choice
Place in oven for approximitely 15 minutes (check with a toothpick... will be ready if toothpick emerges dry)
