How Sweet it is! Sweet Potato Toast! As a meal or a snack...

These sweet potato toasts are a sure way to get your fill of carbs, fiber and tons of beta carotene in a flourless, gluten-free way!

Most of us crave bread with many of our meals,..... heck, we can probably live on bread alone, but unfortunately its not practical and would leave us void of many nutrients.

Sweet potato toast is an awesome "non-bread"carb alternative, that is delicious, filling and nutrient dense. There are tons of options when it comes to toppings as well.... sweet or savory? Your choice.

Recipe:

Preheat oven to 400°

Line baking sheet with parchment paper

Wash and Pat dry 2-3 organic sweet potatoes

Cut sweet potatoes length wise into 1/4" slices (leave skin on for added nutritious fiber)

Lightly coat with oil (avocado, coconut or olive)

Line them on baking tray and place in oven for 20 minutes.

Flip slices and continue cooking for another 10 minutes or so, until fork tender, but not too overcooked (or else slices will be mushy)

Remove, cool and enjoy with your favorite sweet or savory toppings.

Here are some ideas:

This one is topped with almond butter, chopped dates and coconut flakes. The options are limitless here...you can use sliced banana, berries, jam, chocolate spread, nuts, etc...

For a more savory flavor, this one is topped with avocado, egg and chopped chive.

Other savory ideas include: Your favorite slaw, egg salad, tuna salad, etc... pretty much anything you would put onto your favorite sandwich.
