One of my favorites! For a dairy-free soup, this is one of most creamy, nutty and comforting! Trust me... it's so simple and clean, yet never disappoints. Just perfect for those cool winter nights or rainy days.
1 head of cauliflower, cut up and boiled or steamed (not overly cooked)
1 medium onion, thinly sliced
4 cloves of garlic, chopped
1 cup raw cashews
8 sage leaves chopped
4 cups water (or broth of your choice)
salt, pepper, paprika
olive oil for sautéing
(Begin by cutting up and steaming the cauliflower, until almost fork tender, but not too soft.)
In a medium to large sauce pan, sauté the onions, garlic, and sage until the onions have nicely caramelized. Add seasoning, stir all together.
Add Cashews, water and cauliflower and let this cook together another 5 minutes so all the flavors absorb into each other.
Blend in batches until achieving a smooth creamy consistency.
