Lentil Soup Recipe
Fall is in full swing! and what better meal than soup for those chilly days? Lentil soup is a great, protein-packed meal to eat for either lunch or dinner. Lentils provide a wide-range of health benefits including reduced cholesterol, reduced risk of heart disease, increased digestive health and an increase in energy. Low in calories and high in fiber, you can never go wrong with a lentil based dish.

Ingredients (4-6 servings):
1/4 cup of extra virgin olive oil
1 large diced onion
2 diced celery stalks
2 diced carrots
4-5 cloves minced garlic
1-2 cups of dry lentils (green or brown)
1 can of coconut milk
6 cups of water
1 tsp of salt
1 tsp of pepper
1 tsp of cumin
1 bay leaf
1/2 cup of chopped basil
Directions:
Heat oil in a large soup pot over medium heat for about 2-3 minutes
Add onions, carrots and celery
Cook and stir until the onion is tender
Add the garlic, bay leaf, basil, salt, and pepper (a few generous pinches of each)
Stir in the lentils
Add water and bring to a boil
Add coconut milk and reduce to a simmer
Cover and continue to simmer for at least 45 minutes until all veggies and lentils have softened
Add chopped basil until wilted
